Spaghetti Squash Lasagna Casserole

Any Italian food lovers out there? I LOVE Italian food, in fact that is what my husband and I ate on our first date. Here’s a funny story, we were all done eating and the waitress came over and put the check right in front of me. AWKWARD! I was thinking, should I go to the bathroom or grab the check myself and pull out my wallet? He thought it was funny to just keep carrying on a causal conversation keeping the check sitting right by me. Needless to say of course he paid and opened all my doors. 

Now for the reason you’re really here, Healthy Spaghetti Squash Lasagna.

This Spaghetti Squash Lasagna Casserole will bring all the flavors into your household as if you were in Italy.

The best thing is that this dish is Low Carb Spaghetti Squash.

Can I get an AMEN?

There are so many ways to eat spaghetti squash, but this Healthy Spaghetti Squash Lasagna Casserole is by far my favorite way to eat it.

McKenna (my daughter) LOVES spaghetti. So of course I was excited to make her this Healthy Spaghetti Squash Recipe for the first time. I was curious to see how well she would like it since there is a tiny crunch from the Low Carb Spaghetti Squash. She didn’t even care, she still demolished it. 

Let me tell you how I make this Healthy Spaghetti Squash Recipe.

Healthy Spaghetti Squash Recipe

Typical lasagnas take a lot of work to make, so the best thing about this Healthy Spaghetti Squash Lasagna Recipe is the simplicity of making it. Low Carb Spaghetti squash doesn’t have a lot of flavor so it makes a great substitute for a traditional spaghetti noodle.

Ingredients you’ll need:

  • Spaghetti Squash
  • Spaghetti Sauce
  • Ground Turkey
  • Ricotta Cheese
  • Mozzarella Cheese
  • Garlic
  • Italian Seasoning
  • Dried Oregano
  • Red Pepper Flakes (Optional for a little spice)
  • Nutmeg
  • Salt and Pepper

Directions for Healthy Spaghetti Squash Lasagna:

Poke your Spaghetti Squash multiple times with a fork and bake for 1-1.5 hours. Allow to cool. Carefully slice the spaghetti squash in half lengthwise. Scoop out all the seeds out and discard. 

With a fork scrap the inside until it all resembles spaghetti noodles. 

Layer noodles, meat, sauce, cheese and repeat. 

Cover and with foil and cook, remove foil and cook the remainder of the time until cheese is melted.

Cut open spaghetti squash on a baking sheet with a side of ricotta cheese, spaghetti sauce and ground turkey in a saute pan.

Spaghetti Squash Boats

Besides just having Healthy Spaghetti Squash Lasagna, you can also make Spaghetti Squash Boats. The awesome thing is that Spaghetti Squash really absorbs whatever flavor you add to it. Now you may be wondering, what is a Spaghetti Squash Boat?

  • Craving Mexican food? Stuff your Low Carb Spaghetti Squash with ground turkey covered in taco seasoning and add some beans, corn, pico de galo and topped with cheddar cheese.
  • What about American BBQ? Smoke the spaghetti squash for some extra flavor and top it with pulled BBQ pork or chicken with extra drizzle of BBQ sauce and fried onion straws.
  • Looking to make it similar to your favorite Asian dish? Top your Low Carb Spaghetti Squash with roasted broccoli and teriyaki chicken.
  • Want something basic? Just drizzle a little olive oil or butter and sprinkle with salt and pepper.

Healthy Spaghetti Squash Lasagna is protein-packed, low carb and filled with that Italian flavor. Delicious comfort food can be made healthy!

Ingredients

  • 2 spaghetti squash
  • 1.5-2 jars of spaghetti sauce (depending how large the squash are)
  • 1 lb ground turkey
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella
  • 3 cloves garlic, minced
  • 2 teaspoons Italian seasoning
  • 2 teaspoons dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 teaspoon nutmeg
  • Salt and Pepper

Instructions

Preheat oven to 375ºF. Poke each squash multiple times with a fork and bake for 1-1.5 hours, depending on size of squash.

Allow squash to cool and start to cook the ground turkey, when turkey is fully cooked add in your minced garlic, Italian seasoning, dried oregano, red pepper flakes, nutmeg, salt and pepper.

Once cool, slice lengthwise in half. Scoop out the seeds and discard. Use a fork to scrap the meat of the squash creating noodles.

Dump half of a jar of spaghetti sauce into the bottom of a 9x13 pan. Place half of the spaghetti squash noodles as the next layer, followed by half of the meat, half of the ricotta cheese, and half of the remaining sauce. Repeat with remaining squash, meat, sauce and top with ricotta and mozzarella cheeses.

Cover dish with foil and bake for 20 minutes, uncover and cook for an additional 5-10 minutes until cheese is melted and bubbly.

Notes

I recommend using a DEEP 9x13 dish; depending on the size of your spaghetti squash and amount of sauce you use, your dish could be really full.
