Tasty Avocado Toast

From the crunchy sourdough bread underneath to the flavorful nutritious topping, this is the type of toast you’ve been waiting for. The best thing is you can top the avocado mixture with whatever you want. My personal favorite is arugula, radish and fresh squeezed lemon.

At work in my last trimester of being pregnant with McKenna, we would have avocado toast Tuesdays. It was amazing! I had the WORST morning sickness up until about 25 weeks or so. I didn’t want to look, think or smell anything food related. Tyler would be 1 step in the door with food before I got a whiff and told him to walk back out. Chicken was my arch nemesis, so my life consisted of avocado toast, hamburgers, broccoli cheese soup and 20 different flavored tortilla chips.

How can you keep the avocado mixture from browning:

  • Keep the whole seed in your mixture while storing before use
  • Add lime juice to the mixture
  • Press Saran Wrap right against mixture making sure there is no gap

How can you ripen avocados quicker?

My dad taught me to wrap the avocado in newspaper or paper lunch bag and place it in an unheated oven for a couple days; it will help ripen the avocado quicker. Nobody wants to wait a week watching your bright green avocado ripen.

A crunchy sourdough bread underneath toppings filled with flavor.

Ingredients

  • 2 large slices of sourdough bread
  • 2 avocados
  • 1 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon garlic salt
  • 1/8 teaspoon pepper
  • Handful of Arugula
  • 6-8 slices of radishes
  • 1 lemon wedge
  • Additional options: 1/2 teaspoon chia seeds, 1/2 teaspoon hemp hearts, Pinch of red pepper flakes (see notes)

Instructions

Mix avocado and seasonings until well combined, keeping avocado chunky

Toast bread to your liking

Top bread with avocado mixture followed by arugula, radish and fresh squeezed lemon juice

Notes

If adding the additional toppings from ingredients list, I suggest sprinkling it on top of the avocado mixture before you add the arugula, radishes and lemon juice.
