This Italian veggie sandwich is extremely flavorful with a delicious basil pesto cream cheese spread piled in a low carb pita bread for a delicious healthy lunch.

With it being summer time, there are so many fresh fruit and vegetable options. This sandwich is so simple to make which is great when you want a quick healthy lunch.

List of items you’ll need:

  • Frying Pan 
  • Pita bread or your favorite bread
  • Zucchini
  • Bell Pepper
  • Olive Oil
  • Seasonings: Italian seasoning, oregano
  • Minced garlic
  • Feta cheese
  • Cream cheese
  • Basil Pesto

My husband even LOVES this sandwich. Let me tell you a funny story… I always joke with Tyler (my husband) being on an all cheese diet when I met him; Mac and cheese… Cheese pizza… Plain bagels and cream cheese… Don’t get me wrong, I love cheese as well but not for every meal. The word “avocado” was foreign being that it was green. He has been such a trooper trying everything I put in front of him (going 10 years strong together), and he has loved about 99.9% of everything he has tried that is not cheese related.

This Italian veggie sandwich is extremely flavorful with a delicious basil pesto cream cheese spread piled in a low carb pita bread for a delicious healthy lunch.

Ingredients

  • 1 sliced zucchini
  • 1/2 sliced red bell pepper
  • 1/2 tablespoon olive oil
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon oregano
  • 1/4 teaspoon turmeric
  • Pinch of garlic salt/pepper
  • Optional: Red pepper flakes (if you like a kick)
  • Spread:
  • 1/3 cup feta cheese
  • 2 tablespoon whipped plain cream cheese
  • 2 tablespoon basil pesto
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning

Instructions

Mix zucchini, bell pepper, olive oil, garlic and seasoning in a bowl until veggies are well coated.

Sauté veggie mixture for a few minutes until they are tender.

While veggies are sautéing, combine the spread mixture.

Put spread on both sides of the inside of the pita bread.

Fill sautéed veggies into the pita bread.

Will make 2 whole pitas/sandwiches.
