Funny story about my daughter; now that she is getting older she is voicing her opinion more on food. She will also say the funniest things. She has had these muffins countless times, all without realizing there are hidden veggies in there. Although she does like raw carrots you would think she would be in heaven with these anyways. So this time around, she wanted to help and realized the carrots were going in the muffins. She then said “can I have mine without carrots?” I laughed and told her, you know these are called Carrot Cake Cream Cheese Muffins, right?

Needless to say, she devoured these hidden veggie delights and asked for seconds!

  • All Purpose Flour
  • Avocado Oil

  • Maple Syrup
  • Vanilla Extract

  • Salt

Creating the Perfect Cream Cheese Center

Optional Toppings

I usually will top Carrot Cake Cream Cheese with a generous sprinkle of cinnamon sugar, as it is quick, easy and adds the right amount of added sweetness. Another fast option would to add a dusting of powdered sugar. Not only would that make a beautiful presentation, it also adds a touch of sweetness.

A fun optional topping would also to drizzle with a simple cream cheese icing drizzle. Add a cup of powdered sugar, 1-2 tablespoons of cream cheese and gradually add a tablespoon at a time of milk until you get your desired consistency. If you feel the icing is too thin, feel free to add a little more powdered sugar.

Ingredients

  • 1/2 cup avocado oil
  • 1/4 cup melted butter
  • 2/3 cup maple syrup
  • 4 eggs
  • 1 tbsp vanilla extract
  • 3 cups shredded carrot
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 3 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1 tsp salt
  • 8 oz cream cheese, sliced into 24 squares
  • 1/3 cup refined sugar
  • 1 tsp ground cinnamon

Instructions

Preheat oven to 350°F

Prepare 24 muffins pans with muffin liners

In a large bowl, mix avocado oil, melted butter, maple syrup, eggs and vanilla extract until well combined

Next mix in shredded carrots

Add in flour, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt until well combined

With small cookie scoop (or a heaping tablespoon) add 1 scoop of batter into each muffin liner. Add 1 square of cream cheese to each. Follow up with one more scoop of batter to cover the cream cheese.

In a small bowl, mix refined sugar with 1 tsp of ground cinnamon. Generous sprinkle the cinnamon sugar mixture on top of each muffin.

Bake for 18-20 minutes
