Benefits of Cast Iron

Have you ever used a cast iron? I personally love it when cooking chicken as it never fails to provide a crispy skin. They are also perfect for stovetop or oven which makes them so versatile.

Another benefit of cast iron is they are so easy to clean. I don’t know about you, but the clean up to cooking is the worst part of cooking. Best Cast Iron Chicken requires minimal prep and minimal dishes so it is a win win with great clean up.

Tips for Leftovers

My biggest tip would be to finish taking the meat off the bone while it is warm. It’s a little tideous as we all know after cooking dinner and cleaning everything up, who really wants to add an extra step. When the chicken is still warm, it is so simple to remove it off the bone. If you wait till the next day, the chicken leftovers almost hug the bone more and prevents you from getting as much meat off the bone then if you did it right away.

Leftovers are best kept in an airtight container in the fridge. I love to enjoy the pulled chicken on a roll with a drizzle of BBQ sauce.

Ways to Serve the Best Cast Iron Chicken

As mentioned before I love to make the leftovers as BBQ chicken sandwiches. If I’m being honest, when I make this chicken it is always the star of the show. There is so much flavor and it goes great with mashed potatoes and a salad.

Other great options would also be to add it to a soup, caesar salad wrap or even a quesadilla.

Best Cast Iron Chicken

Who needs a grocery store rotisserie chicken when you can easily make one at home. This Best Cast Iron Chicken is so delicious, juicy and has an amazing crispy skin.

Ingredients

  • 4 pound whole chicken, giblets removed
  • 1 tablespoon butter (room temperature/melted) or avocado oil
  • 1/2 tbsp salt
  • 1/2 tsp freshly cracked pepper
  • 12 inch cast-iron
  • Optional cavity fillings: Celery, quartered lemon, carrots

Instructions

Place oven rack in the middle, set cast iron on it and set oven temperature to 450°F

In a small dish, mix together butter (or oil), salt and pepper

Pat the chicken with paper towels to remove any excess moisture

Brush the whole chicken with the butter mixture

If adding the optional cavity fillings, place them inside the empty cavity now

Open the oven and carefully place the chicken breast side up in the hot cast iron skillet

Cook chicken for approximately 40 minutes and the thighs are 135°F and the breast is 120°F.

Turn off the oven, leave the chicken in the oven to continue cooking approximately 40 minutes. Chicken should measure at 165°F

Remove the chicken from the oven and let it rest for 15 minutes prior to carving it
