Quick Birthday Cake Cookies are addicting and so fun to eat. They are soft, sweet and filled with sprinkles. The perfect funfetti cookies!

Quick Sprinkle Cookies

I made these Sprinkle Cookies for my sweet baby’s special day!

McKenna is ONE! It is hard to believe how fast this first year has gone. I transformed my soft sugar cookies recipe into sprinkle cookies! First thing you think of for birthday’s are all things sprinkles.

When we took this picture of her eating the Sprinkle Cookies, I went to readjust her positioning and she made sure to have a death grip on her cookie. I guess she was making sure it wasn’t going anywhere! Haha!!

Going with her Quick Birthday Cake Cookies, I made her a funfetti themed watermelon cake. So I swapped the rainbow sprinkles for chocolate and dyed the cake batter pink. She’s got to dig into a cake that looked like a watermelon. You can’t get anymore fun than that.

Okay so back to sprinkle cookies. So many are intimidated for making cookies from scratch that they would rather just buy the dough. These are sooooo quick and absolutely addicting, you have to make them!

Delicious Cookies From Scratch

Making cookies from scratch or rather anything from scratch can sometimes seem like such a hassle. The awesome thing with these sprinkle cookies is that it’s a quick batter to put together. 

There’s no waiting on butter or eggs to come to room temperature.

If the butter is too cold, toss it in the microwave and DEFROST for a few seconds to allow it to get slightly squishy. Please make sure to not melt it, or instead of Quick Birthday Cake Cookies, you’ll get flat funfetti cookie pancakes.

Yikes!

However, maybe we just created the perfect birthday pancake recipe. HAHA

Is your butter too soft? No worries, we’re gonna flash freeze the cookies for a few minutes anyways.

All you need to do it get your scooped cookie dough on to a cookie sheet or freezer safe dish, and freeze the dough for 15-30 minutes. Then you will take them out and bake them for the desired time on a cookie sheet.

Soft Sugar Cookies Recipe

To give a quick run down on how to make the BEST Soft Sugar Cookies Recipe, you’ll need the following ingredients:

Optional Extra Sprinkle Topping

Sprinkled cookie dough sitting in a mixer and cookie dough sitting in a clear bowl with a cookie scoop and a baking sheet with sprinkled cookie dough on it.

To easily incorporate the semi-chilled butter for this easy Soft Sugar Cookies Recipe, make sure to cube up the butter before adding it to the sugar. Then mix it together till it’s nice and creamy.

Continue to add eggs and vanilla to the mixture and mix to combine.

Combine all the dry ingredients together and add it to the wet mixture.

The last step for the Soft Sugar Cookies Recipe is to transform it into Funfetti Cookies. Yes!! Just add the sprinkles!! Now we can have a party!

If you want to make them extra festive, make a powdered sugar icing to drizzle over the cooked and cooled Sprinkle Cookies. Drizzle the icing over about 5 cookies at a time, then dip them in a bowl of sprinkles.

Creative Funfetti Cookies

There is just something about Funfetti Cookies that bring a smile to your face. Every time I would make a cake in college for my roommates, it would be the funfetti cake with the rainbow chip frosting. YUM!!! 

I knew McKenna would absolutely love these Funfetti Cookies, not just because they’re sweet but all the fun colorful rainbow sprinkles. 

McKenna got THE CUTEST Sprinkle Cookies toy set for her birthday. I can’t wait till she is old enough to actually help me decorate Funfetti Cookies and make many delicious things in the kitchen.

Quick Birthday Cake Cookies are addicting and so fun to eat. They are soft, sweet and filled with sprinkles. The perfect funfetti cookies!

Ingredients

  • 1 1/2 sticks unsalted butter (semi-soft and cubed)
  • 1 1/3 cup of granulated sugar
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 3 cups all-purpose flour
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1/3 cup rainbow sprinkles
  • 1 cup powdered sugar(optional for extra sprinkle topping)
  • 1 1/2 tablespoon milk (optional for extra sprinkle topping)
  • 2/3 cup rainbow ball sprinkles (optional for extra sprinkle topping)

Instructions

Preheat oven to 350 degrees

In a large/medium bowl, mix butter and sugar together until incorporated

Add eggs and vanilla to wet mixture

In a separate bowl whisk together flour, baking powder and salt

Add dry ingredients to wet ingredients and mix until cookie dough is formed

Add 1/3 cup rainbow sprinkles, mix carefully until sprinkles are evenly distributed

Make cookie dough balls and place in the freezer for 15minutes (this will help the cookies from spreading)

Place dough on cookie sheet and gently flatten the cookies with the bottom of a cup

Bake for 10-12 minutes

Yields 2.5 dozen cookies

For additional sprinkle topping, allow cookies to cool completely. Whisk together powdered sugar and milk. Dump icing into a ziplock bag (see note) and cut off a tiny corner of the bag

Place additional sprinkles in a small bowl (big enough for dumping)

Drizzle icing on about 5 cookies then dunk cookie in sprinkle bowl

Notes

When dumping icing into a ziplock bag, fold the ziplock part down on the outside of the bag. This will make it easy to dump into as well as zip up at the end.
