Other amazing options can also be sour cream, guacamole, extra cilantro, and of course endless scoop fulls with all the tortilla chips.   • Avocado oil spray
  • Salt
  • Cumin
  • Chili powder

The new family favorite recipe is this flavorful crockpot chicken chili with white beans. It only requires one pot and minimal prep time.

Ingredients

  • 3 chicken breasts
  • 1/2 diced onion
  • 4 garlic cloves, minced
  • 1/4 cup of cilantro, lightly chopped
  • 32 oz chicken broth
  • 2 (4oz) cans diced green chiles
  • 2 (15oz) cans great northern beans, rinsed
  • 1 cup frozen fire-roasted corn
  • 2 tsp cumin
  • 2 tsp oregano
  • 1 tsp chili powder
  • 1 pkt dry ranch dressing mix (see notes)
  • 4 oz cream cheese
  • 1/3 cup half/half

Instructions

Combine chicken breast, seasonings, onion, garlic, chiles, beans, corn, broth, cilantro in crockpot and stir to combine. Cook on high for 4 hours or low for 8 hours.

Shred chicken and add cream cheese and half & half; stir to combine. Cook on high for 20-30 minutes

Notes

Toppings: Cheese, avocado, jalapeños, lime, sour cream, cilantro, tortilla strips. Homemade ranch mix: 1/4 cup buttermilk powder, 4 tsp garlic powder, 2 tsp onion powder, 1 1/2 tsp dried dill, 1 1/2 tsp dried parsley, 1 1/2 tsp dried chives, 1 tsp salt, 1/4 tsp pepper. (use 2 TBSP of mixture in replacement of 1 store bought ranch packet)
