I like to describe these as a little more carb friendly by replacing the tortilla with the bell pepper. You may feel that these looks slightly intimidating, but I can assure you they are not. Imagine putting together ingredients to create a burrito, but instead of wrapping it up in a tortilla you simply stuff it in a bell pepper.
Picking out the Perfect Peppers
Picking out the perfect peppers is the first step. When wondering the produce aisle, look for the biggest peppers available. I try to get a variety of red, yellow and orange to give options for my kids although they practically taste the same. Green bell peppers are also a frequent option, however they tend to be a little more bitter. A fun swap would also be to buy mini perfect peppers to have as a “nacho” experience, just make sure to adjust the cooking time to be less. We prefer our simple stuffed bell peppers to remain whole, obviously taking the top and seeds out as this will leave a little bit of a crunch in the bell pepper. If you are one to like the bell pepper to be soft all around, you could slice your perfect pepper in half lengthwise prior to filling and they will turn out perfect for you.

Simple Swaps to Offer
These are called Simple Stuffed Bell Peppers for a reason. With a few simply swaps, you can easily change up the spice in these bell peppers. My husband likes the spice while my kids are more inclined to just having it regular. In this case, I will pick a certain color of the bell pepper and extra pepper jack cheese or jalapeños on top of that color so we know those will be for him. Another option would be to swap out the mild green chiles to hot green chiles. Looking to make them vegan or vegetarian? A simple swap would be a dairy free cheese and leave out the ground turkey. How about wanting them more carb friendly? Simply replace the rice with quinoa and you’ll be adding in more protein.

My kids love the bright colors of the bell peppers, but if yours are more hesitant due to seeing large vegetable on their plate I have some ideas for you. Add extra cheese and dump it on a tortilla for a burrito. Make nachos out of them by putting chips on a plate, topping it with the simple stuffed bell pepper filling and sprinkle extra cheese on top. Even though adding those extra carbs may not be your first choice, at least there are some options to help entice your children into getting a filling meal.
