A way to someones heart is potatoes, bacon and cheese! Is there really a better combo than that? These amazing twice baked potatoes have a crispy skin and are so creamy and delicious. There is the perfect amount of texture in every bite.

The Perfect Comfort Food

When I think of the perfect comfort food, two things come to mind… chicken and POTATOES. Potatoes in all forms are my love language. French fries, fried, mashed, baked and twice baked potatoes.

The best thing about these amazing twice baked potatoes is it’s a combo of all. Rubbing a little oil on the outside prior to baking gives a nice crispy skin then the blend of the mashed potato mixture placed in each shell to get an additional baked. YUM! Perfect comfort food in every bite.

  • Avocado Oil
  • Salted Butter
  • Bacon
  • Cheddar Cheese
  • Milk
  • Salt
  • Garlic Powder
  • Onion Powder
  • Paprika
  • Pepper

Easy Way to Cook Bacon

For this recipe, I cook the bacon prior to cooking the potatoes. Cooking the bacon in the oven is the easiest and fastest way to cook bacon. It also comes out so delicious!

Preheat your oven to 400° F. Line a rimmed baking sheet with parchment paper and in a single layer place the bacon side by side. Then cook the bacon for 10-20 minutes until you have reached the perfect amount of crispy to your liking.

While the bacon cooks, scrub your potatoes, poke holes in them with a fork and rub them in oil. Once the bacon gets done cooking, your potatoes will be ready to get placed in the oven and start cooking.

I can’t wait to have you blow your mind with this easy way to cook bacon. You’ll never want to cook it on the stovetop again.

Reheating Amazing Twice Baked Potatoes

Anytime there are leftovers needing to be reheated, think about the texture. French fries, chicken tenders and twice baked potatoes all have one thing in common; a nice crispy shell. If you rewarm in the microwave you definitely won’t get that crunch when you bite. The best option is in the oven as you can warm up more quantity in the oven then in a microwave. After warming up all your leftovers for the family in a microwave it would be roughly the same time as if you just put it all on a baking sheet together and put it in the oven.

Reheating in the oven – Preheat to 350° F and bake for 15-20 minutes. If pressed for time, you can microwave 2-3 minutes and cover the potato with a damp paper towel.

Ingredients

  • 8 Russet Potatoes
  • 3 Tbsp avocado oil
  • 1 Stick (8 Tbsp) salted butter, room temperature
  • 10 strips bacon, cooked and crumbled
  • 1 cup cheddar cheese, shredded
  • 1 cup milk
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/4 tsp pepper
  • Toppings: green onion, sour cream and more cheese

Instructions

Preheat oven to 400° F

Rub the potatoes with avocado oil and place on a lined baking sheet and bake for 1 hour, check that they are cooked through

Reduce oven temperature to 350°F

Allow 5-10 minutes for potatoes to rest and cool enough to handle

Once potatoes are cool enough, slice each one lengthwise and scrape the inside of the potato out while leaving a small rim of potato to provide support with the shell

In a large mixing bowl, mash the scrapped out portion of the potatoes, butter, milk and seasonings together. Once combined add cheese and bacon, stir to combine

Add mixture back into each half of the potato shells

Place potatoes filling side up on the baking sheet and top with more cheese

Bake for an additional 15-20 minutes
