Quick Delicious Berry Cobbler

This delicious berry cobbler is mouthwatering from the fruit filled bottom to the sweet crunchy topping. It is equally delicious warm or cold as leftovers. Top it with your favorite vanilla ice cream or whipped cream.

Did you know my husband isn’t a huge fruity dessert person? He had never even tried a strawberry until COLLEGE! Yeah, he’s crazy, and now he’s crazy obsessed with fresh fruit. After I took this cobbler out of the oven, I left it to cool just long enough to where it wouldn’t burn my mouth so I could dive in. I asked him to try it, his response “ehhh you know I don’t like stuff like that.” Since he loves me that much, he took a bite….then another….and another…. Let’s just say he hated it so much he wanted to keep eating it. I gave most of it to some friends so we wouldn’t eat it all ourselves. The next day he asked me to get more ingredients to make more. I quickly obliged!

Making a cobbler can take a lot of time, between washing your fruit to cutting it up add the ingredients to make it nice and gooey. Then you have to make the topping and let it cook about an hour.

You can make this from start to finish in 40 minutes total!!

Yes, you read that right; preparing your ingredients and bake time in 40 minutes. This is what you need:

  • 2 large cans of fruit pie filling (I love strawberry and raspberry)
  • 6 oz of fresh fruit (blueberries are great, just rinse off and dump in)
  • 1 box of yellow cake mix
  • Butter
  • Brown sugar
  • Old fashioned oats 

And then I topped it with some blue bell vanilla ice cream! It was HEAVEN!!!

This is such an easy fruit filled dessert; you can throw together when you want to bring something homemade to your next potluck. Everyone will be sure to dig in when they see it. The best part is that you didn’t spend too much time mixing it up and can even make it with your busy little one tugging on your leg (I know from experience).

Ingredients

  • 21 oz strawberry pie filling
  • 21 oz raspberry pie filling
  • 6 oz fresh blueberry (optional)
  • 1 box of yellow cake mix
  • 3/4 cup of cold stick of unsalted butter
  • 1/3 cup brown sugar
  • 1 1/3 cup old fashioned oats

Instructions

Preheat oven to 350 degrees

Dump pie fillings in a 9x13 cake dish and mix together

Gently fold in blueberries

In a food processor or mixing bowl; combine cake mix, butter, brown sugar and oats. Mix until incorporated and creates a "wet sand" like consistency. If mixing in a bowl by hand, cube your butter and take 2 butter knifes. Begin to criss-cross the knifes to "cut the butter" into the mixture.

Once topping is combined, sprinkle all over the berry mixture.

Bake for 30 minutes

Top with your favorite vanilla ice cream or whip cream
