Dad’s Favorite Oatmeal Cookies

Whether you’re having these cookies plain or with your favorite add-ins, these are absolutely the best. They are addicting with great texture and flavor that will leave you wanting to eat the whole batch. We even love them the next day when they have firmed up a little. I mean Oatmeal is meant for breakfast, right?!?

This is my Dad’s Oatmeal Cookie recipe that he shared with my mom when they were dating and it is the best one out of them all. He’s not a huge sweet guy but LOVES these cookies. He goes for more the nuts and raisins route than chocolate chips, which are still equally delicious.

We have tried other Oatmeal Cookie recipes but some how always circle back to this being the best one. When there is that much history behind a cookie you know it has to be delicious!

McKenna even wanted to join in on the fun and make sure I was making them just how her Papa would want them.

How to freeze cookie dough for later

I always freeze my dough, it’s great portion control and makes it so easy when you feel like something sweet or need help prepping for a get together. That way you can bake as many as you would like in that moment. Let me tell you how.

  1. Line a baking sheet or freezer safe dish with parchment paper.
  2. Use a cookie scoop to create evenly round cookies.
  3. Lay out cookie dough balls on prepared sheet.
  4. Flash freeze your dough for 30min-1hr.
  5. Once dough balls have firmed up, transfer them to a freezer safe bag or container. Dough will keep well for 3 months.
  6. When ready to eat, set cookie dough on prepared baking sheet while oven is preheating to allow them time to defrost a little.

Serves: 2.5 dozen

Ingredients

  • 3/4 cup shortening
  • 1 cup packed dark brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 1/4 cup water
  • 1 teaspoon vanilla
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3 cups old-fashioned oats
  • 1 cup chocolate chips (optional)
  • 1/2 cup raisins (optional)
  • 1/2 chopped walnuts (optional)

Instructions

Turn oven on to 350 degrees

Combine shortening, sugars, egg, water and vanilla with wooden spoon until creamy with a few chunks of shortening left (see note below)

Mix flour, salt and soda then combine with wet mixture

Add in oats and desired toppings and mix until incorporated into the dough

Bake for 12-15 minutes

Makes around 30 cookies

Notes

If you beat the wet mixture too much or if your cookies come out like pancakes, I recommend rolling your dough into balls and freeze for about 20 minutes to help keep cookies shape.
