With Mother’s Day coming up, most moms wish for a morning of sleeping in and not having to worry about being in the kitchen cleaning up someones mess. If you can crack an egg, then you can make the French Toast Casserole. It only takes a few minutes to assemble. Another option is to make this casserole yourself the night before and your loved one can put it in the oven for you.

- Powdered Sugar

The Cream Cheese in this French Toast Casserole adds a delicious richness to the flavor and to make it fun for Spring/Summer, I added a homemade blueberry syrup. The syrup is an easy recipe that can be made with a few staple ingredients.

In the Spring and Summer months such as now, I love to serve it with fresh berries and make deliciously easy homemade blueberry syrup. For a hint of citrus, use some lemon zest mix with a little sugar and fresh blueberries. Wow it’s delicious.
During the Fall and Winter months, a simple dusting of powdered sugar and drizzle of maple syrup makes it irresistibly delicious.
Favorite Breakfast
Growing up French Toast was always a favorite of mine as well our whole family. The downside is you can only cook so many at a time. By the time my Mom would be done making it for my siblings and me, she would start the next batch just to help replenish more for us. We would then be done eating, all while she is still cooking hers and wouldn’t get to enjoy hers with the rest of us.
Mother’s sacrifice is always wanting to take care of the family. Needless to say my Mom finally starting making this delicious French toast Casserole and the best thing was that everyone’s food got done at the same time and we were all able to eat together and share in the moment of our favorite breakfast.

Indulge in this easy Cream Cheese Overnight French Toast, and put the stress aside of worrying about putting together a delicious breakfast by preparing this casserole the night before. Prepare a 9x13 baking dish by spraying with cooking spray or buttering the dish to prevent sticking. Cut bread up into approximately 1 inch slices then repeating into 1 inch cubes. Place 1/2 of the bread cubes into prepared baking dish. In a small dish, combine cream cheese, 2 tbsp milk, powdered sugar and 1 tsp vanilla and mix until smooth. Take a small spoon and evenly distribute little dollops onto of bread cubes in baking dish. Top with remaining bread cubes In a medium dish, whisk eggs, remaining milk, sugar and 1 tsp vanilla. Pour mixture over bread cubes. Cover dish with plastic wrap and store in fridge for 4 hours or overnight. CINNAMON CRUMB TOPPING Mix flour, brown sugar and cinnamon until combined. Cut up butter into approximately 8 cubes. Cut butter into dry mixture by using 2 forks (or 2 knifes or a pastry cutter) and criss-crossing forks across each other until creating a crumbly mixture. Add crumble mixture evenly on top of casserole filled dish right before placing into the oven. Preheat oven to 350°F and bake casserole with plastic wrap removed and replacing it with foil for 30 minutes. Then remove foil and bake for an additional 25-35 minutes Allow to cool 5 minutes, then cut into serving sizes and serve. Topping options: fresh fruit, blueberry syrup (recipe in notes below), powdered sugar, maple syrup. Blueberry Syrup: 1 1/2 tbsp arrowroot or cornstarch, 1/3 cup maple syrup, 1 cup cold water, 2 cups fresh or frozen blueberries. Instructions: Combine Maple Syrup, Water and Blueberries in a medium saucepan on medium heat and bring to a boil. Stirring occasionally, once it begins to boil reduce heat and simmer 8-10 minutes. Once done simmering, combine arrowroot starch and 2 tablespoons of water in a small bowl and mix throughly. Mix in starch mixture to blueberry mixture and remove from heat. Stir occasionally and allow to thicken for about 5 minutes. Enjoy! For storing, place in an airtight container in the refrigerator for up to 2 weeks. Cream Cheese Overnight French Toast
