When I say this is the best refrigerator cake recipe, I mean it. I love that it requires minimal effort and truly anyone can do it. The hardest part is probably rinsing and slicing the strawberries. Or really I should say, remembering to set the cream cheese out first thing in the morning to make sure it has softened enough.
If you do however forget to set your cream cheese out to soften, there is a quick way but you need to make sure you follow these steps exactly. Do not forget to remove the cream cheese from the foil wrapper. That is the most important thing to do, we don’t want any fires starting. Then simply microwave for no more than 15 seconds.

Growing up, I use to love those rectangle wafer cookies. To make this icebox cake with cool whip even sweeter, wouldn’t those wafer cookies be amazing? I haven’t tried those in this recipe, but I think the vanilla and chocolate ones would taste absolutely amazing.
Another delicious alternative for this refrigerator cake recipe, could be to replace the graham crackers with angel food cake. Again, I have not tried that but I’m imagining strawberry shortcake taken to another level by transforming it into this no bake berry icebox cake. Yum!!

You'll need a 9x13" dish In a large bowl add cream cheese and pudding mixes, beat until combined Slowly beat in the milk Gently stir in the cool whip Once all mixed, scoop roughly 1/3 cup of mixture and spread on bottom of pan In a single layer add some of your graham crackers (approximately 7.5) Scoop about 2 cups of the cool whip mixture and spread on top of the graham crackers Top with strawberries and blueberries and a 1/4 cup of white chocolate chips Repeat the graham cracker, cool whip and berry assembly 2 more times (reserve the last 1/4 cup of chocolate chips to melt on top) Refrigerate overnight or at least 4 hours to allow time for the graham crackers to soften When ready to eat, melt the fine 1/4 cup of white chocolate chips (see note below) Drizzle melted chocolate over entire dish Enjoy! When you bring the cool whip home from the grocery, place it in the fridge and it will be ready to use right when you need it.
