Easy Chicken Teriyaki and Broccoli

A tried and true family favorite is this Easy Chicken Teriyaki and Broccoli. It is the perfect weeknight meal that will leave you craving leftovers. 

Healthy Family Favorite

Yup, I said it, healthy family favorite that includes broccoli, what?? My kids are obsessed with this teriyaki sauce so when it becomes drizzled over the broccoli, they actually don’t mind it. 

I know what you are thinking, ummm…. Teriyaki is not healthy. There is sugar in this sauce recipe, however it is not store bought so you are avoiding all the processed ingredients. If you are looking for a store bought version that is less sugar, I would recommend Primal Kitchen. I love to use this one when I am in a pinch.

Ingredients

Teriyaki Sauce

  • Coconut Aminos or Soy Sauce
  • Water
  • Red Wine Vinegar
  • Brown Sugar
  • Minced Garlic
  • Minced Ginger
  • Arrowroot Start or Cornstarch

Veggies

  • Carrots
  • Broccoli
  • Garlic Powder

    Protein
  • Chicken Thighs

Cooking the Chicken

I personally love to use chicken thighs in this easy chicken teriyaki and broccoli recipe. If I have a busy day, I love to throw them in the crockpot, which is how this recipe calls for it. Once it has finished cooking in the crockpot, I gently shred to still have good chunks of chicken. 

If you prefer to cook the chicken in the oven, I would recommend doing so in a cast iron skillet. Preheat the oven to 400°F and bake for 30-40 minutes until cooked through.

Tips for Kids to Try Their Vegetables

Anytime there is some food item they are in question about, I ask them to at least lick it to see since taste buds are always changing. Sometimes they like it, sometimes they don’t, but how will they ever find out if they don’t at least taste it. 

Another tip to get your kids to try their vegetables is add some colorful sprinkles on it. I know it sounds weird, because I personally wouldn’t want them on mine. However, kids are obsessed with sprinkles, so I’ll put a few in a small dish to let them sprinkle them on their plate. Most of the time they will actually finish their plate.

Easy Chicken Teriyaki and Broccoli

A tried and true family favorite is this Easy Chicken Teriyaki and Broccoli. It is the perfect weeknight meal that will leave you craving leftovers. 

Ingredients

  • 6 chicken thighs
  • 2/3 cup coconut aminos*
  • 1/3 cup water
  • 2 tbsp red wine vinegar
  • 2 tbsp brown sugar
  • 2 tsp minced garlic
  • 1 tsp minced ginger
  • 1/2 tbsp arrowroot starch*
  • 1 tbsp warm water
  • 3 large carrots (1.5 cups shredded carrot)
  • 2 cups broccoli, finely chopped
  • 1 tsp garlic powder

Instructions

Cook chicken thighs in a crockpot on low for 6-8 hours or high for 3-4 hours.

Add coconut aminos, 1/3 cup water, red wine vinegar, brown sugar, garlic and ginger in a saucepan over medium heat and mix until sugar has dissolved.

In a small dish, mix 1 tbsp warm water and arrowroot starch until dissolved.

Add arrowroot starch to sauce mixture and mix until sauce has thickened, then remove from heat.

In a large skillet, heat 2 tbsp avocado oil add carrot and broccoli and cook for approx 7 minutes until done.

Drizzle teriyaki sauce over the cooked chicken and vegetables.

Serve with white rice.

Notes

Can sub coconut aminos with soy sauce. Can sub arrowroot starch with cornstarch.
