Shockingly Simple Scoop Biscuits

Now my grandma has a delicious biscuit recipe that she makes perfect every time despite not having any exact measurements for the recipe that she uses. However, her’s is a little more complex and requires a little more work; that will be for another day to share. 

My mom recreated that recipe in shockingly simple scoop biscuits. You still need to make sure to not over mix the batter, but they do not require a cup or biscuit cutter to get the biscuits onto the pan. All you need is a simple spoon or if you want to be a little more precise, use my tried and true cookie scooper

Sweet and Savory

My husband, kids and I are all lovers of chocolate, so when the option to have it be a part of our breakfast we always say yes please. How can one truly pass up this biscuits and chocolate gravy recipe. 

What is nice about this biscuits and chocolate gravy recipe is that it is the right amount of sweet and savory. After the biscuits are done baking, pour salted melted butter on top to help cut the sweetness of the gravy some. If you are not a chocolate lover, no worries just skip adding the gravy on top.

What I love about this Biscuits and Chocolate Gravy recipe is that you should have all these ingredients already at home.

  •  All-Purpose Flour
  • Sugar
  • Baking Powder
  • Salt
  • Butter
  • Full-Fat Buttermilk
  • Heavy Cream
  • Cocoa Powder
  • Whole Milk

Tips for Serving

As mentioned above, if you’re not a chocolate fan there are still plenty of options to have with these. Simply split your biscuit in half and enjoy with butter and jam. Peach jam is an amazing addition! We also love to recreate Chicken Minis from everyone’s favorite chicken chain restaurant. 

Another amazing tip for serving would be to add a little honey inside and serve it alongside your dinner. Nothing beats having something a little sweet alongside a delicious savory meal.

Ingredients

  • FOR THE BISCUITS
  • 2 cups all-purpose flour, 1 additional cup for coating
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 5 tbsp butter, very cold
  • 4 tbsp butter, melted
  • 1 cup full-fat buttermilk
  • 3/4 cup heavy cream
  • CHOCOLATE GRAVY
  • 6 tbsp butter
  • 2 tbsp cocoa powder
  • 2 heaping tbsp flour
  • 3/4 cup sugar
  • 3/4 cup milk

Instructions

Preheat oven to 425°F

Smear 1 tbsp of cold butter all inside an 8 inch cast iron skillet.

In a large bowl, mix together 2 cups of flour, sugar, baking powder and salt.

Grate 4 tbsp of cold butter into the dry ingredients and gently toss to disperse the butter.

Add buttermilk and heavy cream and mix just until combined. Do not over mix, as there should be clumps.

In a small bowl add the additional 1 cup of flour for coating.

Using a medium size cookie scoop or spoon, scoop biscuit dough and gently roll it into the flour bowl.

Place dough ball in greased cast iron, each ball will be very close together.

Bake biscuits for 20-25 minutes until golden.

While biscuits are baking, start the chocolate gravy.

In a medium sauce pan, melt butter at medium heat.

Add cocoa powder and flour and mix until combined.

Add sugar and mix until combined.

Add milk and mix until combined.

Once all chocolate gravy ingredients are combined, whisk continuously for approximately 7 minutes until gravy has thickened.

Remove from heat.

When biscuits are done baking, remove from oven and drizzle 4 tbsp of melted butter on top.

Notes

If you choose to skip the chocolate gravy, another favorite is to serve it with jam or honey.
