Freezer Friendly
Any recipe that is freezer friendly is always a go to for me. When I was a pregnant with my second, I made a batch of these about a month before my due date to freeze. My daughter loved to eat these Strawberry Banana Oatmeal Bars, so I knew it would be a perfect, easy and healthy breakfast for her and our family wouldn’t have to worry about thinking what to make her for when I would be in the hospital. Let me tell you, I was glad I made these when I did, because the next week I ended up having my baby.
To freeze these bars, simply allow them to fully cool, slice them up and place them on a baking sheet a few inches apart. After an hour or two, remove them from the freezer and place them in a gallon size freeze bag or freezer container for storage. They will stay good in the freezer for up to 3 months, but they could get devoured before that.
Tasty Toppings
I love to add additional tasty toppings on to these Strawberry Banana Oatmeal Bars, although they are equally delicious as is. A scoop of almond butter or peanut butter is so good and also adds some protein to your diet. Adding chopped nuts on top as well would add a nice crunch. You can also add extra fruit on top such as chopped strawberries, raspberries, blueberries or any of your favorites. Another great option is a dollop of greek yogurt and a drizzle of honey. Yum!!
