Amazing Pumpkin Bars

Most Thanksgiving’s growing up my family, grandparents, cousins, aunts and uncles would go to an amusement park that was open. It usually wasn’t too busy and we would be able to get on rides in a reasonable amount of time. The park would also serve all the traditional Thanksgiving fixings so everyone loved it. Not to get to side tracked from these delicious Cookie Sheet Pumpkin Bars, but I have to say this funny story. The first Thanksgiving my husband and I were dating (1 month strong). He joined my family; he had never really been on many rides in his life, but he was a trooper. My one aunt and I LOVED every ride. We decided to go on a claw type ride that spins and my boyfriend/now husband was all for it, until he wasn’t. We are up in the air spinning and needless to say, that was the last ride he went on the rest of the day. Spinning rides are not meant for everyone.

Okay, now back to drooling over these Amazing Pumpkin Bars recipe. When we weren’t at the amusement park on Thanksgiving, my mom would always make these Cream Cheese Pumpkin Bars for everyone. Unfortunately, there were never any leftovers. However, that’s how you know it was a fan favorite.

Ingredients

  • PUMPKIN BARS
  • 2 eggs
  • 1 2/3 C sugar
  • 1 C oil
  • 1 (15oz) can of pumpkin puree
  • 2 C flour
  • 2 tsp cinnamon
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • -
  • CREAM CHEESE FROSTING
  • 3 oz cream cheese, softened
  • 1/2 C butter, softened
  • 1 tsp vanilla extract
  • 2 C powdered sugar

Instructions

Preheat oven to 350°F

In a large bowl, beat together eggs, sugar, oil and pumpkin puree until combined

In a medium bowl, mix together flour, baking powder, baking soda, cinnamon and salt

Add dry mixture to wet mixture and mix well.

Spread on a 10"x15" cookie sheet (ungreased) and bake for 25 minutes

Once pumpkin bars have cooled, make cream cheese frosting

Beat together cream cheese, butter, vanilla extract and powdered sugar until it is a smooth frosting consistency

Frost bars when cool and cut into 24 bars
