Baked Peaches with Crumble Topping

Mini Peach Pies

Having perfectly ripe peaches will enhance the flavor of these mini peach pies. Now I don’t mind the skin on peaches, but I know people have a hard time with the skin. If you are someone that doesn’t, I have an easy hack to removes the skin easy and quick.

Bring a pot of water to a boil. Slightly slice a x into the bottom of each peach. Fully submerge a couple peaches to the boiling water and blanch 30-45 seconds, if they are not ripe then they may need to stay in an additional 10-15 seconds. Once the skin starts to peel apart from the peach, remove the whole peach from the boiling water and gently place it in a bowl or ice and water. Wait 1-2 minutes to allow the peach to cool off, and peel the skin away.

If you choose to peel the skin away, you would want to do this process prior to slicing the peaches in half and topping them with crumble.

To help combine, I will sometimes use my fingers to pinch and sprinkle the mixture together. Imagine you are place with sand at the beach. Don't over do it to where your butter starts to melt, you want your butter to remain cold.
