Ingredients

  • *PANCAKE INGREDIENTS*
  • 2 1/2 cups all purpose flour
  • 2 tbsp Maple Syrup
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 eggs
  • 2 cups buttermilk
  • 1/2 cup milk
  • 4 tbsp unsalted butter, melted
  • 1 tbsp vanilla extract
  • *CRUMB TOPPING INGREDIENTS*
  • 3/4 cup flour
  • 3 tbsp light brown sugar
  • 2 tbsp sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 5 tbsp unsalted butter, melted
  • 3/4 cup chocolate chips (optional)

Instructions

Preheat oven to 350°F and coat a 9x13 baking dish with cooking spray

Prepare crumb topping in a medium bowl, add flour, sugars, cinnamon, salt and mix until all combined. Add in melted butter and mix until a crumbly mixture forms. Set inside the refrigerator while combining the pancake ingredients.

Melt 4 tbsp of butter in a medium sized bowl and set aside to cool and come to room temperature.

In a large bowl, add flour, sugar, baking powder, baking soda, salt and mix until all combined.

Once butter has cooled, mix in buttermilk, milk, eggs and vanilla extract.

Add wet ingredients to dry ingredients and mix until just combined, some clumps should remain.

Pour pancake batter into prepared baking dish.

Sprinkle the crumb topping over the pancake batter.

If you choose to add chocolate chips (or other topping suggestions mentioned in the blog post), add those on top of the crumb topping.

Bake for 40-45 minutes until it is lightly golden and cooked through.

Serve with maple syrup and/or a small pad of butter.

Notes

For leftovers store in the refrigerator up to 3 days or create individual servings and store in a freezer safe container up to 3 months.
